Gold Garlic. Idaman para chef Michelin. Dulu di Belanda sama Perancis kalau pas bersihin bawang putih nemu kayak ini biasanya aku buang (di Indonesia dulu disuruh buang), kena marah sama chefnya. Aku bilang bawang busuk kayak gitu kok.
Mereka tertawa sampai keluar airmata. Lalu mengambil bawang busuk yg jamuran sambil bilang: "this is rotten" terus ambil bawang ini (dia hanya menguning, agak soft, warnanya kayak karamel, bersih tanpa ada jamur) lalu bilang: "this one is naturally fermented, and this is more precious than gold in gourmet"
Gold garlic ini biasanya dimasukkan ke dalam olive oil, bersama dengan rosemary, tarragon, dill, dan remahan truffle. Setelah satu minggu saya disuruh mencoba minyaknya dengan seiris baguette. Hmmmm, benar-benar lezat!!!
Lalu mereka ambil bawangnya yg sudah soft, dihancurin pakai sendok, diberi cuka balsamic, madu dan mustard, dan menyuruh saya memakannya dengan seiris tipis salmon asap. MasyaAllah! Lalu mereka bilang: "see, we will teach you how to eat properly. We will train your palate"
Sejak saat itu, kalau bersihin bawang, saya selalu cari Gold Garlic ini.. emang maknyus!!
