   Description
WHAT IS PUFF PASTRY?
The dough’s main ingredients are flour, water and butter.
Puff pastry consists of many layers of dough, enriched by a veil of butter among the plies, obtained by repeated folding and rolling. In Italian, puff pastry is Millefoglie.
FROM HANDMADE
Millefoglie’s traditional recipe foresees that the initial dough is rolled out with a rolling pin and, then, the subsequent layers by using a puff pastry machine. The same, flattened dough needs to be folded over and over on itself several times. After each step, the dough is kept in the refrigerator to rest.
Matilde understood this process and pencilled it in her cookbook, still kept in the Company’s archives.
It dates back to the early 20th century when Matilde opened the first artisan shop in the province of Verona.
TO THE UNIQUE INDUSTRIAL-MADE
Thanks to Matilde’s grandson Giuseppe, it can be claimed that Matilde Vicenzi’s puff pastry is the only one in the market composed of 192 layers. That fact, together with premium and very precise controls on the cooking phase, is synonymous for high-quality puff pastry making.
So high-quality results can be achieved through an industrial production process only.

A special golden wrapping brings the freshness to the highest level. The metallic and protective material preserves the delicate and high-quality pastries from the light and moisture. These, as we know, are the enemies of high-quality pastries.
