Kamala in Sanskrit means lotus or pale red, this is to describe the fruitiness, unorthodox flavors that achieved through post-harvest processing method. This coffee is a single cultivar, Kartika, known for its resistance to disease, and high yield production. We know that we could get the best out of this cultivar by processing it through anaerobic fermentation.
The ripest cherries are picked, sorted, and sprayed with a specific inoculant, and fermented inside an anaerobic tank until it reaches 3,8 pH. After the fermentation finished, the cherries are immediately moved to the raised beds. where it will dried to 10-12% of moisture contents. The coffee is then put into hermetic plastic bag, where it will rest in a clean, unhumid room for one month. The last processed is hulling and sorting. Combining anaerobic fermentation, and natural drying, resulting an outstanding Kamala taste profile. This coffee has aromatics of Acacia Flower, Juiciness of Peach with a delicate Chocolate-coated-Almond finish.
