Sourced from 1400-1600 masl farm in the city of Bandung, this coffee brought a unique combination of Timor-Timur, Lini S-795, and Typica varietals. This coffee adopted the typical Colombian coffee process, natural anaerobic, to elevate the sweetness in the coffee.
Skilled farmers carefully hand-sort the coffee cherries before a 108-hour barrel fermentation period. Drying is a multi-step process: first under the sun for 3 days, then transferred to a greenhouse to achieve a consistent moisture content of 11% and develop a more vibrant flavor profile.
Thanks to this attentive post-harvest processing this coffee offers a truly captivating cup. Expect a burst of bright acidity reminiscent of fresh POMEGRANATE and NECTARINE, a hint of LEMON, and the HONEY-like sweetness that graces your palate, lingering pleasantly after each sip.
