Between Loire and Vilaine in the south of Brittany, the salt basin of the Guérande covers almost 2000 hectares of salt marsh. Prior to the 9th century, the creation of the Guérande salt marshes spanned several centuries. The fleur du sel appears during the first stages of the formation of the salt: the fine and light salt crystals float in patches on the surface of the water.
It is a rare product and its production is low. The flower is `picked' with a specialist instrument: the Lousse.
Fleur du sel is used liked fine salt. Its flavour is like no other, its scent is of violet; its fine, slightly moist crystals mean it is a perfect compliment to fresh vegetables, chips or soft-boiled eggs.
It is between 854 and 859 that the monks of Saint-Sauveur-De-Redon receive as donation several marshes-salants on the peninsula of Guerande. Today these salt works are exploited by producers called palaudiers. Their working techniques have changed little since the time of the monks. Sea water is admitted to the salt pans at high tides. It advances slowly by decanting, and gradually concentrates in salt until reaching the final basins, called carnations. In the carnations, the concentration continues under the effect of the sun and the wind until saturation. Light salt crystals of salt appear and float in plates on the surface of the water, it is the flower of salt. It is rare because production is low. It is "picked" with a specific instrument: The lousse. It is used as fine salt, but its flavor is incomparable. We advise you to add it just before serving your dishes. Its friable crystals, slightly damp, especially allow to appreciate it on the meats, raw vegetables, the eggs with the shell.
