200 grm fillet ayam potong tebal
2 sdm soy sauce kikoman
1 sdm minyak wijen
1/2 sdt merica
1/2 sdt garlic powder
PELAPIS BASAH 1 (harus kental)
4 sdm tepung terigu
1 sdm maizena
1 btr kuning telur (kuning utk lembut ; putih utk renyah)
secukupnya Kaldu ayam bubuk
Garam sejuput
secukupnya Air es
2 pelapis basah
1 btr putih telur
2 sdm air es
pelapis kering
5 sdm tepung terigu
5 sdm tepung kentang (potato starch) boleh skip
1 sdm maizena
1 sdm tepung beras
1 sdt garam
1/2 sdt merica bubuk
Minyak untuk mengoreng
Langkah:
Marinate ayam fillet dengan seluruh bahan 1 malam atau minimal 3 jam
Celup bahan pelapis basah 1 tiriskan
Celupkan ke bahan pelapis 2
Gulingkan ke bahan pelapis kering sambil dicubit2 di remas2 diamkan 2 menit
sambil memanaskan minyak untuk mengoreng
Goreng karage hingga golden brown angkat tiriskan
Diamkan 10 menit ditirisan
dan pelapis. Sangat berguna untuk membentuk tekstur dan memperbesar ukuran
produk.
