Manchego is a D.O. (Denominacion de Origen) protected cheese, meaning it can only be made from 100% Manchega sheep milk’s milk, and only produced in the region of La Mancha. This harsh arid & rocky plateau region of Spain is really best for sheep – cows just can’t deal with this climate. Originally named “La Mansha” by the Moors, which means “waterless land”, the region endures freezing winters and unbearably hot summers, with very little rain. Only sheep can thrive in this environment.
As we’ve already learned, two different Manchegos can mean two very distinct cheeses. The major distinction will typically be between young and aged Manchegos, but heat can also be a flavor factor. Legally, Manchego can be aged anywhere from 2 months upwards of 2 years, and made either from raw milk or pasteurized milk.
