The coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage, dehydrated strawberries and wine yeast were added as a compost. The cherries were then pulped and placed to dry on raised beds with strawberries placed amongst the coffee until the ideal moisture content was achieved
The innovative idea behind using fruits in the fermentation stage is created during the times of pandemic with excessive fruits harvest and no market to sell. This method reduces wastage by including the dehydrated fruits into coffee fermentation process
