Umami Serenade Breeze is a unique specialty coffee from the Rancabali region, West Java, Indonesia, processed suing the Koji fermentation method. This innovative technique involves using Koji mold (Aspergillus Oryzae) the same fungus used in making sake, miso, and soy sauce to enhances the coffee fermentation, resulting in a complex and rich flavor profile.
Deep sweetness with notes of dried fruit, caramel, and honey Umami complexity, sometimes resembling sake or aged wine, smooth acidity with a long, clean finish.
