This subprimal cut from the back of the neck up to the fifth rib of the cow is popular for its deep beefy flavours. The well-marbled meat has few inches of similar muscle as ribeye which makes it suitable for Yakiniku, shabu-shabu, and steak. Chuck Roll is traditionally stewed and braised so the muscle fibres break down as they are sinewy and tough. It is priced 20% lower than the striploin and ribeye meats.
