Behind the beans:
It’s always a pleasure having a Yellow Bourbon Single Cultivar in our line-up. It’s no secret that Yellow Bourbon is really loved in Kopirelo due to its Sweetness quality. Thus, we decided to release another Yellow Bourbon lot.
This Yellow Bourbon was harvested at 22 June from Garut & processed under protocol of Saninten Coffee. Ripe Yellow Bourbon cherries are processed with rotating stainless-steel tank for 216 days. Rotating tank ensures the fermentation will undergo evenly with any overfermentation spot. Then coffee is slowly dried for 40 days on raised bed. We give long period of resting to give the structure to the cup.
The main spectrum of this is Sweet Purple Fruits. We found first sip it’s Vibrant & Juicy like
Grapes & Blackberry with Violets Aromatics. Sweetness is the attribute that we love because it resembles Ripe Deep Purple Fruits Sweetness like Blackberry. Mouthfeel is Juicy & Round with some Mouthcoating quality on the palate. When coffee cools down, you will find more Red Berries like Strawberry.
