Proses pengolahan buah menjadi emping melinjo Aceh melalui beberapa tahapan, pertama skali, pengupasan kulit luar buah melinjau, setelah kulit luar dikupas tinggal biji berkulit keras, setelah itu buah melinjo dengan kulit keras di gongseng dengan pasir sampai panas, setelah panas gongsengan melinjau dikeluarkan untuk kemudian dikupas kulit kerasnya sehingga tinggal inti buah yang berwarna krem, masih dalam kondisi panas, inti melinjau di tumbuk berulang kali sampai berbentuk kerupuk ( emping) . kemudian di jemur pada sinar matahari sampai kering.
Kerupuk Melinjau Aceh sangat lezat dan cocok untuk tambahan lauk pada saat makan, apalagi setelah digoreng di taburi sedikit garam.. wow..
