Kue gapit adalah kue tradisional. Kue tersebut terbuat dari tepung tapioka, berbentuk mirip kue simping. Namun jika simping memiliki diameter lebih lebar dengan ketebalan yang sangat tipis, kue gapit berdiameter kecil dan lebih tebal. Meski demikian, kue gapit tetap renyah ketika gapit untuk kue tersebut konon diambil dari cara pembuatannya. Ya, adonan kue yang sudah jadi digapit oleh dua lempeng besi di atas pembakaran. Alhasil, adonan menjadi pipih, dan kue pun menjadi renyah ketika sudah matang.
