In 2024, Mr. Beanfreak_picker and Mr. Andi Wijaya processed this Ijen Lokatara coffee using the Anaerobic Natural method in stainless steel tanks for 140 hours. CO2 played a key role in slowing fermentation and preventing bacterial growth, resulting in a unique flavor profile. The stainless steel tanks allowed better control of temperature and pH, making longer fermentation possible compared to plastic or drum containers. Expect malic acidity such as Green Apple balanced with fruity notes like Pear and hints of sweet aromatic notes like Honey.
