Salah satu pangan alternatif yaitu beras analog yang memiliki karakteristik fisik menyerupai beras tetapi unggul dalam kandungan gizinya. Beras analog merupakan tiruan beras yang terbuat dari bahan-bahan seperti umbi-umbian dan serealia. Ubi ungu (Ipomea batatas) adalah salah satu potensi lokal pangan yang layak dikembangkan sebagai bahan baku beras analog.
Cara Memasak:
* Cuci bersih beras sebanyak 3 kali, lalu tiriskan.
* Diamkan beras selama 10 menit.
* Masak air dalam pengukus sampai mendidih, lalu masukkan beras ke dalam pengukus.
* Kukus selama kurang lebih 15 menit.
* Nasi siap dihidangkan.
