Andaliman, tuba atau itir-itir (Latin: Zanthoxylum acanthopodium DC) adalah bumbu masak khas Asia yang berasal dari kulit luar buah beberapa jenis tumbuhan anggota marga Zanthoxylum (suku jeruk-jerukan, Rutaceae). Bumbu ini di Indonesia hanya dikenal untuk masakan Batak, sehingga dikenal orang luar daerah ini sebagai merica batak. Khasiatnya yang mampu menghilangkan bau amis pada ikan mentah menjadikan andaliman sebagai bumbu andalan dalam masakan khas Batak seperti arsik dan saksang. Andaliman memiliki aroma jeruk yang lembut namun cukup pedas sehingga meninggalkan sensasi kelu atau mati rasa di lidah, meskipun tidak sepedas cabai atau lada. Rasa kelu di lidah ini disebabkan adanya kandungan hydroxy-alpha-sanshool pada rempah tersebut. Selain dalam masakan Batak, penggunaan andaliman sebagai bumbu masak juga dikenal dalam masakan Asia Timur dan Asia Selatan. Di Indonesia sendiri, andaliman banyak tumbuh secara liar di hutan penuh semak wilayah Kabupaten Toba, Kabupaten Samosir, Kabupaten Tapanuli Utara, dan Kabupaten Dairi. Sedangkan di Kabupaten Simalungun terdapat 3 kecamatan penghasil andaliman yaitu kecamatan Raya, Dolog Masagal dan Purba.
