Is it mandatory to wash the beans twice? Actually no, but doing extra bringing extra result. Kami mau kopi yang dihasilkan punya rasa yang lebih clean dan lebih harum daripada kopi lain. Sebelum masuk ke proses cuci, kami mengunci biji kopi dalam tabung kedap udara (anaerob) agar selama proses fermentasi tidak terkontaminasi. On the first wash setelah masa fermentasi, we make sure biji kopi yang kami panen sudah bersih dari mucilage/lendir fermentasi. And for the extra wash, kali ini sengaja dilakukan agar biji kopi dapat menyerap banyak air untuk menurunkan kadar gula serta memunculkan asam amino dan protein. Hasilnya jadi bikin kopi ada sensasi manis dan silky mouthfeel. So, cheers to the daily doze of Anaerob Double Wash to keep you sane with the clean taste and aromatic scent.
