Preparation
• Suggestions (Claypot Rice Recipe):
1. Marinate chicken thighs (500g, diced) for 15 minutes - 30 minutes using dark sauce, oyster sauce and ginger juice
2. Fry salted fish bits until golden brown
3. Remove salted fish from claypot, add washed rice (1 cup) and coat rice with leftover oil then add water (1 cup)
4. Cover lid and let it simmer for about 10 minutes - 15 minutes
5. Add marinated chicken, fried salted fish bits, dried mushrooms (4 - 8 pieces) and thinly sliced sausages (2 pieces, soaked in hot water) on top of rice
6. Cover the claypot and simmer for another 15 minutes
7. Lastly add xiao bai cai (2 - 4 pieces) and let it cook for a few more minutes
8. Ready to serve, add dark soy sauce and sesame oil to taste
