Dry aged beef adalah daging yang digantung dan dibiarkan mengering selama beberapa minggu. Daging sapi dry-aged biasanya dipotong berupa karkas utuh atau dibagi menjadi beberapa bagian (primal cut beef).
KOJINIKU DRY AGED STEAK COOKING INSTRUCTION
1. Leave your KOJINIKU steak outside the fridge in room temperature for 20 minutes before cooking
2. Sprinkle your steak with a little bit of coarse salt, pepper and oil (do not use the tasting salt for this)
3. Heat a flat non-stick pan on high until the pan until the pan smoked a little
4. Sizzle your steak on the hot pan and reduce the heat to medium
5. Cook your steak according to your preference
6. For thick cut of steak, you can cook them in the oven after sizzling to slowly cook the inside
7. Warm a plate in the microwave for 1 minute
8. Let the steak rest on the warm plate for 2-3 minutes
